Paleo trufflesMy mum’s birthday was coming up and I wanted to give her a special treat. She doesn’t like to eat sugar, dairy and gluten, I could say she is almost paleo. So I had to find the right recipe for the right treat, and here we are. Paleo truffles was the answer. There are two different recipes fro the truffles I’ve made, both of them are really really simple and delicious! A good thing to keep in mind while making them is that the flavour won’t change even if the shape is awful. These two recipes were adapted from here and here
1st recipe: Ingredients
150 g Dark Chocolate (70% or higher)
1/2 cup Full Fat coconut cream
Unsweetened shredded coconut Directions:
Finely chop the dark chocolate and place in a bowl.
Heat up the coconut milk for about 1 minute in the microwave.
Pour into the bowl with the chocolate, stir until completely melted and smooth.
Put in the refrigerator for 1 hour so it harden.
Using a melon scoop or a tablespoon, scoop out the truffles from the now-hardened mixture.
Drop them into the shredded coconut and roll. 2nd recipe Ingredients 1 cup Medjool dates, pitted 1/2 cup unsweetened shredded coconut
1 cup raw pecans
1 teaspoon vanilla extract
1 cup 70% dark chocolate chips, for coating
In a food processor, combine all of the ingredients and process until a sticky dough is formed.
Scoop the dough and roll it into smooth balls. Place the balls on a baking sheet lined with parchment paper and place them in the fridge.
Melt the cup of dark chocolate chips, and remove the baking sheet from the fridge. Roll each ball in the melted dark chocolate, then return them to the parchment paper to set.
Return the chocolate truffles to the fridge or freezer until ready to serve.
